Butternut, Black Bean Tacos with Mango Salsa
Ingredients:
- 1 medium butterunut squash
- Can 15 oz black beans
- 2 tbls. olive oil
- Salt and pepper to taste
- Tortillas (we used homemade blue corn masa tortillas)
Salsa
- 1 ripe mango
- ½ a cup fresh cilantro
- Juice of 1 lime
Directions:
- Preheat oven to 375 F. Using a sturdy knife chop butternut into small cubes. Place on baking sheet and drizzle with olive oil and salt and pepper.
- Cook squash in oven until soft and slightly brown (about 25 to 30 minutes)
- Rinse black beans and combine with cooked squash.
- To make salsa, chop mango into 1/2 inch chunks. Chop cilantro. Add lime juice and cilantro to mango and mix.
- Heat tortillas on a cast iron skillet. Assemble tacos by scooping butternut/ black bean mixture onto tortilla and top with salsa.
