Grilled Summer Veggie Kebabs
Ingredients:
- Cucumbers
- Summer squash
- Zucchini
- Sweet peppers
- Spicy peppers
- Bell pepper
- 1 yellow onion
- 4 cloves of garlic, crushed
- 1 bunch fresh mint
- 1 handful fresh oregano leaves
- 4 tbsp olive oil
- 1 tsp salt
- 1 tsp ground black pepper
- 2 tbsp fresh lemon juice
- 8 skewers (bamboo or reusable metal ones)
Directions:
- Cut veggies into 1 inch pieces. Mix veggies, 2 tbsp olive oil, garlic, mint, oregano, salt and pepper in a medium bowl. Let marinate for 30 minutes.
- While the veggies marinate, begin basting mix by whisking remaining 2 tbsp olive oil and lemon juice in a small bowl to blend.
- Assemble skewers with alternating veggies. Sprinkle with salt and pepper.
- Prepare barbecue on medium high heat. Grill until veggies are cooked through, turning and basting occasionally with oil-lemon mixture, about 13 minutes.
